
Creole Blackeyed Pea Stew
1 1/2 cups cooked blackeyed peas
1 (14.5 oz) can fire roasted tomatoes
1 cup chicken broth or vegetable broth
2 cups frozen gumbo vegetable mix (okra, corn, celery, onions, peppers)
1-2 tsp blackened creole seasoning
Directions:
Combine all ingredients in a saucepan. Bring to a boil, and then simmer for 30-40 minutes to let flavors combine.
