Protein Power Pumpkin Cookies
1 cup pumpkin
1/4 cup applesauce
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
2 tbsp protein powder of choice
1 tbsp agave nectar
1/2 cup mini chocolate chips
2 cups rolled oats
Preheat oven to 350 degrees. Combine all the ingredients in the order listed. Mix until well combined. Drop cookies onto baking sheet and press down slightly. Bake for 15 minutes. Makes approximately 12 cookies.

These look so amazing--I wish I had the recipe around Thanksgiving time when I was struggling with what to do with pumpkin! I ended up making up my own oatmeal pumpkin cookies but they were horrible :(

ReplyDeleteI am really loving the fact that this is healthy and tasty! What makes the chocolate chips different are they sugar free? See my husband and I are on a diet and we are trying to find ways to *coughs* have are cake and eat it too. But often times I find that light foods tastes not that great.
