Apple Downside Up Cake


Oh my goodness...the way my house smelled while this was baking in the oven was absolutely amazing! This Apple Downside Up Cake was easy and fast to make! I used "special" apples in my cake, but you will have to check my blog tomorrow to see why they are special! When you are baking this, watch it carefully. The recipe says to cook for 25-30 minutes, but mine was done in half the time! This would make a perfect Brunch cake!!!!

Apple Downside Up Cake
1/4 cup Packed brown sugar
2 medium Apples, sliced
2 cups Buttermilk baking mix
2 tbsp White sugar
1 tsp Ground cinnamon
1/4 tsp Ground nutmeg
1 Egg
2/3 cup Milk
Directions:
Preheat oven to 400 degrees. Melt butter in a 9 inch pie pan while oven heats. Remove from heat.
Sprinkle the brown sugar over the melted butter. Arrange the apple slices over the brown sugar. In a medium bowl, stir together the baking mix, sugar, cinnamon and nutmeg. Add the egg and milk, beat with an electric mixer until smooth. Spoon batter over the apples. Bake in the preheated oven for 15 minutes or until a toothpick inserted comes out clean. Invert cake onto a serving plate while still hot. Serve with ice cream or whipped topping.

  25. Mmmmmm.... this cake looks yummy! I love that you used "special" apples and am very curious about them. One of my favorite cakes that my Mom used to make was Pineapple Upside Down cake... something about the carmelized warm and gooey flavors gave me such a special feeling. The only other that topped it was a delicious apple pie. This cake combines both my faves! The gooey richness of the upside down cake with the homey apple tastes! I simply can't wait to try this one at home and see if the flavor "takes me back!" Thank you for sharing.

  30. Because I use only honey for sweetener, I was delighted to see how little sugar there is in this recipe.

    I'll be picking up ground fall apples in the morning. This one will be going in my special file.
