Low Fat Oatmeal Chocolate Chip Cookies

1 c. rolled oats
1.5 c. oat flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. instant espresso powder
1/2 c. applesauce
1/2 c. blackstrap molasses
1/2 c. maple syrup
1 tsp. vanilla extract
1/2 - 1 c. chocolate chips
Preheat oven to 350 F. Combine dry ingredients. Add wet ingredients and stir until just mixed. Scoop dough onto a cookie sheet (about 2 tbsp per cookie) and bake at 350 F for 12-15 min.Makes 20 cookies.

ReplyDeleteI, too, love oatmeal cookies. In foods, fat is the major flavor carrier. Reduce the fat, you reduce the flavor (and good chewy texture). My philosophy is to avoid low fat but limit the quantity you eat. The end result is the same: less fat.
