Thai Sweet Potatoes
Ingredients:

4 medium sweet potatoes, peeled and cut into chunks (about 2 pounds)
1/2 cup sweet Thai chili sauce
1/2 cup coconut milk
cilantro
Directions:
In 3-quart saucepan, cover potatoes with water.
Bring to a boil.
Reduce heat to low and simmer 20 minutes or until potatoes are tender and then drain.
Return potatoes to saucepan and mash.
Stir in sauce and coconut milk.
Top with cilantro.
