That loaf looks simply delicious. My family has fallen in love with quick breads. They made such a nice snack for the kids when they get home from school and I love it that I can sneak good veggies - like sweet potatoes - into their diet without protest.
ReplyDeleteIt was nice to see your little dragonfly in my kitchen :)

ReplyDeleteYUM! Oatmeal bread is one of my favorites, and with sweet potato?! Genius, girl, I say it all the time but it couldn't be more true!
ReplyDeleteThis bread sounds fabulously moist and wonderful. I love spicy, homey tasting breads, and this one sounds right up my alley. It looks delicious, and I love your use of the baby food--such a great tool!
ReplyDeleteThe bread looks great! I made muffins with sweet potatoes once, but I didn't puree them. I will have to try this idea.
ReplyDeleteI'm loving this - I can almost taste it from here.
ReplyDeleteIf I have honey, would I use the same amount as for agave? Thanks! This looks great and I'm so happy there's not extra sugar!!
ReplyDeleteJennifer
Megan, what a great recipe. Sweet Potato and Oats! AND dairy free??? Sounds like a bread I would love.
ReplyDeleteI must make this bread!!! Sweet potatoes are amazing with everything!
ReplyDeleteI made the bread this weekend- with plenty of alterations, including adding dairy, and it tastes OK. The middle though is still dough-like, even though I left it in the oven for about 45 minutes. Is this the way it should be?
ReplyDeleteJennifer
Jennifer- I am sorry it didn't turn out right. It does turn out moist, but not doughy in the middle. I am wondering if the use of dairy made it a little different. What exact alterations did you make? Krista made it with applesauce, but I think she made it with all the same ingredients otherwise, and it seemed to turn out rigt. Here is her post: http://kristaskravings.blogspot.com/2009/03/lot-to-talk-about.html
ReplyDeleteI used whole wheat flour (same amount as in the recipe), honey (a little less than the 1/2 cup called for) and no chocolate chips, applesauce (same amount as in the recipe) and no help powder.
ReplyDeleteThanks for that link.
Jennifer
Yummu I love sweet potato bread. The oatmeal gives it a nice twist i cant wait to try this recipe.
ReplyDeleteThis sounds great! I'll definitely be making it soon.
ReplyDeleteI can't wait to try this! I love sweet potatoes and have been wanting to bake more of my own breads lately. This would be perfect for my morning toast routine.
ReplyDeleteAgave--yeah!!
Thanks!
You know thatI truly appreciate the use of the agave nectar and voerall 'health' of this bread.
ReplyDeleteI made these the other day, except I made muffins. They are absolutely delicious! I had one for dessert (and maybe once for breakfast!) with cream cheese icing -- to die for! Thank you for the wonderful recipe.
ReplyDeleteThis one is a definite must try! Sounds and looks delicious!
