Muffin Mix Cookies


This recipe is easy and very versatile. The original recipe used a Jiffy muffin mix, but I used Betty Crocker's Chocolate Chip Muffin Mix. I also decided to heat up some chocolate frosting in the microwave for 30 seconds, and drizzle it on top. These cookies are extremely soft. I almost hesitate to call them cookies, because to me they are like mini muffin tops. I think I might make some Banana Nut Muffin Cookies next time. What flavor muffin mix would you use?

Muffin Mix Cookies

1 package muffin mix (16.4 oz)
4 Tbsp. milk

2 eggs

4 Tbsp. margarine or butter, softened


Directions:

Preheat oven to 350°.
Combine all ingredients and blend well.
Drop by spoonful onto baking sheet.
Bake
10–12 minutes.
Remove from baking sheet while still warm.

Makes 24 cookies.

  6. YUM! Soft cookies pwn all--screw the crunchies!

    Know what's CRAZY about mixes? You don't actually need eggs, oil, water, or ANYTHING. All you need is a can of diet soda! My friend and I didn't believe it and made a gingerbread cake with it...it came out so good. I don't know if it would work for cookies, but I don't see why not.

  19. I just made these. For the first batch I forgot to add butter, and they were AMAZING.
    I added butter to the second batch, and they were still pretty good, but without butter... I dunno. It was a nice mistake though.

  20. I tried your recipe with blueberry and also strawberry cream muffins. So good just didn't seem to make enough. Ha Ha Sure is an easy way to make cookies. I've done it with cake mix before now I can make some more different flavors. You can also add raisins, chips,or nuts.

  25. I know this is well after the original post but I just wanted to rave about this a bit. Was in a bind to bake something yummy but the only chocolate chips I had were in the muffin mix. I used a brand of mix not listed here, measured out the suggested amount and did everything else as suggested. Worked great!! Better cookies then muffins I think! Thank you!!
