Sweet Potato Butter

My Mom and I went to the Peddler Show today, which is a traveling craft fair. We found one booth that was selling preserves, and we spent at least 10-15 minutes tasting them all! I did not have a hard time choosing the one I wanted to take home. The Sweet Potato Butter was the winner from the beginning with it's sweet and spicy smoothness that made me want Thanksgiving to come sooner!!! The ingredient list is short and all natural: sweet potatoes, pure cane sugar, and spices. I have already tried it mixed in my oatmeal with some cinnamon, and it was delicious. Here are some ideas for various uses of sweet potato butter, as well as some links to recipes to make your own.

Ideas For Using Sweet Potato Butter:

Put on toast, bagel, english muffin, biscuits, etc.

Heat for a couple seconds and top your ice cream.

Put on a peanut butter sandwich.

Add to a ham or turkey sandwich.

Use as a glaze for chicken/pork.

Add to cottage cheese or ricotta cheese.

Recipe For Easy Sweet Potato Pie:

from http://www.striplings.com/default.aspx

Mix 1 jar of Stripling’s Sweet Potato Butter with 2 beaten eggs. Pour into unbaked pie shell and bake at 350 for approximately 45 minutes or until lightly brown. Add Marshmallow Cream to top and serve. (Marshmallow Cream optional)
