If you love beans and rice, you have to try this unique dish. I found a recipe for pumpkin vinaigrette and decided it would taste good with black beans. All the flavors blended so beautifully. I topped mine off with some chopped cilantro! This dish would be good hot or cold. I can't wait to have the leftovers, because I know the flavors will be even better after marinating longer together.Black Beans and Rice with Pumpkin Vinaigrette
4 cups cooked brown rice
2 cups black beans
4 Tbs Pumpkin Puree
1/4 cup Balsamic Vinegar
1 Clove Garlic
1 Tsp Sugar
1/2 Tsp Salt
1/8 Tsp Black Pepper
1/2 Cup Olive Oil
1/4 cup Balsamic Vinegar

Directions:
Finely chop or mash the clove of Garlic.
Put all ingredients except the Olive Oil into a bowl.
Whisk all ingredients together.
