Ranch Chicken Pockets and Yummy Cookies!

Make your own Hot Pockets at home! It's easy. My husband loved these and dipped his into honey mustard! I didn't put any veggies in it this time, but tomatoes taste great in these pockets. All you need is a refrigerated can of pizza dough, precooked chicken strips, Colby and Monterrey jack cheese, and ranch dressing. We used lowfat cheese, all natural chicken strips, and light ranch dressing to make this recipe a little healthier. You can actually use any combination of veggies, meats, and cheese to make this your own yummy creation.

Directions:
Spread out pizza dough on a floured surface. Cut into 4 equal squares. Place the desired amount of chicken on each square. Mix 1 cup cheese with 1/4 cup Ranch dressing. Divide among four squares on top of chicken. Fold dough over top of chicken mixture and seal edges using a fork. Bake at 400 degrees on a baking sheet sprayed with no stick spray for 15-20 minutes or until they start to turn a golden brown.




For dessert, my husband requested Neiman Marcus Cookies. He has wanted me to make these for years, and I finally did it! I added chunks of Hershey's Special Dark to the recipe because he loves a mix of milk and dark chocolate in his cookies. Needles to say, I had to take a picture of this plate of cookies fast before several of them disappeared. He definitely has a very happy full tummy now!
