Preview: The Lick-able Bowl!

I am always making healthier versions of desserts, and my husband likes to indulge in the "unaltered" recipes every now and then. Here is a preview of the pre-baked mixture of what I made for him! The picture of this mix reminds me of when I was little, and my sister and I would wait for my mom to finish scooping the mix out of the bowl. She would then give each of us a spoon and we would scrape the sides of the bowl so that we could get as many little tastes of the sweet goodness of the batter. OK....admit it! This bowl looks totally lick-able!! Tune in later to see the finished product!

Pumpkin White Bean Burgers

It amazes me how pumpkin is so versatile. I have been making so many pumpkin recipes lately, but I don't get tired of it, because it seems to present me with a totally different taste with every recipe I make. I was nervous about this recipe, but it did not let me down. I would have to say that this is one of my top favorite pumpkin recipes so far. These burgers were so amazing. The cinnamon, sage, and nutmeg blended in such a wonderful way with the pumpkin. I baked these in the oven. I would suggest leaving the burgers in the oven for 30 minutes, because at 20 minutes they still seemed too soft.

Pumpkin White Bean Burgers
Ingredients
1 medium onion, chopped
2 garlic cloves, minced
1 tsp oil
1 cup great northern beans
1/2 cup canned pure pumpkin
1/3 cup quick cooking oats
1/4 tsp sage
1/4 tsp cinnamon
1/8 tsp nutmeg
Salt to taste
Pepper to taste
Directions
In a large skillet, saute onion and garlic in oil for about 5 minutes or until soft, then set aside. In a large bowl, mash beans with a fork. Be sure to mash most of the beans until a paste forms, leaving some whole beans are okay. Add pumpkin, oats and seasonings to beans. Add onions and garlic to mixture. Mix until well combined. Allow mixture to rest in refrigerator for at least 30 minutes, the mixture can be left overnight or up to 3 days. Divide bean mixture into 4 equal balls. With hands, shape mixture into patties about 3 inches around and 1/2 inch thick. To cook patties, bake in 350 degree oven for 20-30 minutes, turning once. Or, place 1 tsp oil in large skillet over medium heat. Place patties into pan and cook for about 5 minutes. Turn patties and cook an additional 5 minutes, or until patties are browned on both sides.

Pumpkins and Apples

I found this new product at Whole Foods yesterday. This natural applesauce in a pouch is perfect for me, because I can use a little bit in my oatmeal and then reseal it. This comes in apple and apple strawberry flavors. I bought the apple strawberry and it was delicious. When I was reading the product site, I discovered that the pouches were designed by NASA. Check out the Materne website.


Of course, the applesauce made me start to wonder about pumpkin/apple combinations. I couldn't find any pumpkin applesauce recipes, but I did find these intriguing recipes for pumpkin apple butter.

Angel Food Cupcakes with Surprise Ingredient Frosting

My friend's birthday celebration is tomorrow at work and I wanted to make her something similar to her favorite dessert, which is Strawberry Shortcake. I decided to make Angel Food Cupcakes, but I didn't want to just put Cool Whip on top. I found a recipe for Cool Whip Frosting that was perfect. The cupcakes are courtesy of a Betty Crocker mix! The Frosting recipe was found at Cooks.com. It is so easy to make. All you have to do is combine 1 cup Cool Whip, 1 cup low fat or skim milk, and 1 package instant vanilla pudding. The result was a light and creamy frosting with a wonderful vanilla flavor. I am going to use this frosting idea in the future. I am thinking of using butterscotch pudding to make a frosting for some pumpkin cupcakes.

Aimee's Adventures Recipes

When I was looking for the recipe for pumpkin pie won tons last night, I stumbled across one of my old favorite recipe websites. Aimee has a wonderful collection of easy and low fat recipes on Aimee's Adventures that I have tried in the past. Of course, I love all her pumpkin recipes, and she has her own low fat version of the pumpkin pie won tons.
