Lemon Pudding Cupcakes

These cupcakes were so much fun to make! My mind was swirling with other combinations of cake flavors and puddings that I could combine. This cupcake is made with lemon cake mix, lemon pudding, and whipped cream cheese frosting.
To make these cupcakes, bake the lemon cupcakes according to directions on cake mix packaging. While the cupcakes are cooling, prepare filling by mixing 2 packages (3.4 oz) of instant lemon pudding with 2 cups milk. When cupcakes are cool, cut a 1 inch diameter hole in the middle and about half way down into the cupcake. Pull out the piece of cake and fill the hole with a tablespoon of the pudding mixture. Cut off the bottom half of the small piece you removed and replace the circular portion back on top of the pudding to close the hole. Frost and enjoy! These cupcakes should be refrigerated since they have the pudding centers.

So what combinations of cake flavors, puddings, and frostings would you like? If you were reading my blog back in September, you know I am a pumpkin lover, and I am dreaming of a pumpkin version of these cupcakes!

Hmmm, these look interesting, I don't know they are a flavor I would want to try exactly, but I love the idea. I had a muffin phase for awhile where I filled muffins with things. I would put half the batter in the mold, put some jelly in, but the rest of the batter and bake. Always turned out well. Experimented with those for a couple months.

Great post!

My weakness is lemon-filled doughnuts, but now I'm switching to lemon-filled cupcakes. Totally yummy! :)

That lemony center looks so great. I'm not a huge lemon fan, but I do love lemon pie and these remind me of that in cake form. :)

I have made these many times...I also do this, it sort of makes a Boston Cream Cupcake: 2 packages Instant vanilla pudding, 3 cups milk, whip, then refrigerate..in seperate bowl, whip up some real whipped cream ( 1 small carotn whipping cream), then fold in the pudding with the whipped cream, fill the cupcakes ( or use as filling for cream puffs), then top with chocolate frosting or chocolate ganache :)when I use this for cupcakes, I make 2 packages of cupcakes as the filling is quite a bit..I usually do this for parties :)

Those are great. I love lemon cake & pudding, so they would be right up my alley. I think a chocolate cake with white chocolate pudding would be a great combination as well.

When you lose physique does it take place all over the
body equally or to certain parts more than other individuals?

Reason i request is i've been on a diet and have noticed a large alter all over my body and im a good deal thinner all other my physique. I have also noticed even though that my breasts have gone really modest and are half the size because of towards the level of fat ive lost on my upper physique. My thighs and buttocks are starting to go now slowly but gradual.
