Snickerdoodles are one of my favorite cookies. When I found out about my food allergies, I knew I had to find a way to make them without dairy and eggs. I used this recipe but used some suggestions I found on the recipe page to make them vegan. I substituted Earth Balance for the butter and egg replacer for the eggs. I also used baking powder in place of the tarter and the baking soda. The result was amazing. If you don't tell anyone, they would never know these were vegan!
1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tarter
1/4 teaspoon salt
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tarter
1/4 teaspoon salt
1 tablespoon ground cinnamon, mixed with1/4 cup sugar
Directions:
Cream together butter and sugar, then beat in eggs, one at a time.
Mix dry ingredients together, and mix into butter mixture.
Roll teaspoonsful of dough into balls.
Roll in cinnamon-sugar.
Place on ungreased cookie sheets.
Flatten slightly if desired.
Bake for about 10 minutes at 375 degrees F or until very lightly browned.
Cool, and store in a tightly covered container.

You know, you should try baking with olive oli. I've been doing it a lot lately and it's really good and dairy free! I also use flax + water for eggs.

Aw I haven't made snickerdoodles in forever. They were the first cookie I ever baked by myself as a kid. I'll have to add it to my recipe queue.

We love snickerdoodles, and now we are having to eat all non dairy and no cane sugar so I'm always curious to see what others come up with. I would like to see your version too!! (Hint, Hint!!) LOL!!
These look delicious, as does the chocolate cherry cake! I love snickerdodles because they are so chewy and soft, and this one looks super easy!

The best vegan food is food that doesn't taste vegan!
And they're flat too! Big and flat. Love that compared to the rounder, thicker versions. We're not vegan, but surely we couldn't tell a difference...as long as it's tasty!
I'm so glad you were able to make them so you could eat them, they look wonderful Megan!
omg i havent had a snickerdoodle in forever! they look so perfect too!
Those look beautiful! I'm glad you veganized 'em!
I love, love, LOVE snickerdoodles!! They are often so overlooked!
snickerdoodles are one of my favorites too!! :)
Snickerdoodles bring back fond memories of high school - I used to eat a gigantic one every week with my family when we ordered out from a specific restaurant! I'm glad you are still able to enjoy them the vegan way!
