Black Beans and Rice with Pumpkin Vinaigrette
4 cups cooked brown rice
2 cups black beans
4 Tbs Pumpkin Puree
1/4 cup Balsamic Vinegar
1 Clove Garlic
1 Tsp Sugar
1/2 Tsp Salt
1/8 Tsp Black Pepper
1/2 Cup Olive Oil
1/4 cup Balsamic Vinegar

Directions:
Finely chop or mash the clove of Garlic.
Put all ingredients except the Olive Oil into a bowl.
Whisk all ingredients together.

Black beans and rice is the cheapest way to get a healthy meal but it's also so delicious every time. Pumpkin vinaigrette sounds quite interesting...
No offense but I am going to try it as a vinaigrette... that way I can keep if for Christmas and use my pumpkin I grew... just to impress my visitors.
