Tonight's dinner was full of flavor. I mixed a can of fire roasted diced tomatoes with some mixed vegetables and Cajun spices. I poured this over some grits and added some shrimp. I used San Gennaro grits that come in a roll just like precooked polenta. This was my first experience with grits, and I really liked them. They tasted a lot like polenta to me, but were not as thick. What are some other ways that you all enjoy grits? I would like to try them as a breakfast dish.

Your dinner looks so good, I love shrimp and have been wanting to make this. You beat me to it! I've only eaten them a few times before. I had them with breakfast when I was in Florida with butter and splenda.
I have never had grits myself and they aren't something generally found around these parts. Polenta, on the other hand, is pretty tasty.
hello....I made shrimp tonight to post about tomorrow - kismet?
Megan, You dinner looks awesome. I love shrimp. We don't often have grits down here but I have had them on the road... looks awesome! Thanks for sharing

This looks so good. It almost makes me want to eat shrimp!
fabulous dinner! I bet it's full of flavor and spicy!
I like grits too, bought last time in Tj's. Its texture is similar to polenta, but creamier. I'll get some this weekend.
Yay grits!
This is one of my favorite southern treats.
I love Southern cooking and love the sound of using Cajun shrimp in this dish you have made.
Megan, this looks yummy. I've never tried polenta, but I'm going to. Thanks for the great suggestion. Have a great weekend!
Cajun shrimp and grits sound amazing! I wonder if I'll be able to add the ingredients for your version to my grocery order in time!
Thanks for sharing!

I love shrimp and grits! I had it for the first time when I visited my daughter in Charleston.
I think most southern people eat their breakfast grits with butter, but I like them with a little milk and sugar. Creamy yum!
thanks for talking about the grits! i've used polenta before, but have always been intimidated by grits - now i'll have to take the leap
