So what do you do if you have leftover cinnamon polenta. Well...make cinnamon polenta sticks. Warm them in the microwave for 30 seconds and top with peanut butter. YUM!!

Semi-Homemade Sweet Potato Soup with Cinnamon Polenta Croutons
I spotted the Imagine Sweet Potato Soup on the shelf at my local grocery store, and I knew I had to try it. When I eat soup, I like it to be hearty and I like to chew a little bit. This soup straight out of the box was smooth and velvety, but I decided to add my own kick. I cooked up some polenta according to the package instructions and added a little cinnamon and stevia. I then put it into a ziploc container and let it sit in the refrigerator to take shape for about 30 minutes. When I was ready for the dinner, I put the soup on the stove to heat. I then cut my polenta into cubes and warmed them in the oven for 5-8 minutes at 350 degrees. Then I poured the soup in one of my little bowls and tossed in some of my cinnamon polenta croutons. It turned out delicious. The croutons soaked up the soup, and they were delicious chewy pillows full of sweet potato and cinnamon.
So what do you do if you have leftover cinnamon polenta. Well...make cinnamon polenta sticks. Warm them in the microwave for 30 seconds and top with peanut butter. YUM!!

All I can say is, "YUM!!!!!!"
A perfect comfort meal! What a great idea, you are so inventive.
Cinnamon polenta croutons! How's creative! I love that idea. I can't wait for autumn to really begin, because that means butternut squash soup, and these would make a lovely addition!
I haven't made sweet potato soup in AGES . . . thanks for the idea!
To answer the question you left on my blog, yes, I did make the Muesli Breakfast Bars! I linked the recipe in a previous post, I think -- it's from The New Mayo Clinic Cookbook.
Megan you are so creative. I bet it turned out great. I'll have to give it a try.
While I'm not a fan of sweet potato, I do love polenta/cornmeal and anything made with it!
Gosh darn you are so creative, Meg! Honestly - this dish sounds incredible! Cinnamon polenta croutons are the perfect complement to a sweet potato soup! I really feel like you're onto something - I think Thanksgiving dinner may include sweet potato mash with polenta croutons! I'm writing it down as we speak!!
P.S. I haven't forgot about that wonderful award you gave me, promise! I will post about it tomorrow :o)
cinnamon polenta croutons?!?? I think i'm in love!
I love the cinnamon polenta. Looks tasty
Polenta croutons in a soup sound like an excellent idea!
I agree with everyone else, those croutons sound crazy good!
Oh my gosh, you are a genius!! I have to try this. Soon! The weather's getting perfect for a hot bowl of soup.
So Megan, you are always creative and very innovative. This recipe doesn't let me down. I love all the ingredients and I think I am following Veggiegirl's lead by saying YUM.
Great work!
