I didn't get a chance to go to the grocery store today, and my ingredients to pick from were slim tonight. I decided to create something that might please my palate. It turned out better than I ever expected. It was almost like a mini pizza with a polenta crust. I am going to make this again when I have more veggie toppings and mozzarella cheese.
Tomato Polenta Tart
1/4 cup dry polenta
1/2 cup water or chicken broth
1 tsp Parmesan cheese
1/2 cup canned or fresh tomatoes
Italian seasoning
Directions:
Mix polenta, water, and cheese in a mug.
Microwave for 1 minute 30 seconds.
Stir and microwave again for 1 minute.
The polenta should be thick.
Pour polenta onto plate and shape into a crust.
Mix Italian seasoning (to taste) into tomatoes.
Top crust with tomatoes, top with desired amount of Parmesan cheese, and microwave for 1 minute.

Excellent - another polenta recipe! I ran out of cornmeal Wed. making my sour cream polenta loaf, so I'll have to make sure I add it to my shopping list for next week.

I love polenta! My mom often served it as a base for saucy or stew like foods when I was a kid. Another tip....after you cook the polenta, spread it into an 8x8 pan and cool it in the fridge over night. The next day, cut it into squares (or rectangles) and grill it. It gets a nice crust and stays soft on the inside! This was my favorite way to eat it as a child!
Your "mini pizza" looks wonderful and your kitchen helper is so cute. My dogs are always right there in the kitchen when I'm cooking, just waiting for me to drop some food on the floor, which they're happy to clean up for me.
Polenta with tomato sauce is one of my all time favorite comfort foods and with fall here, it is the perfect time of year.

Never made polenta before, I'll have to try it. I've had the store brand stuff, garlic flavored I believe, and it was delicious fried up in slices! Sounds great with tomatoes!

MMMMMMmmmmmm. I love Polenta. Any which way you slice it. On it's own, as a base for just about anything, and certainly for use in a tart! Great recipe!
