Creole Blackeyed Pea Stew
1 1/2 cups cooked blackeyed peas
1 (14.5 oz) can fire roasted tomatoes
1 cup chicken broth or vegetable broth
2 cups frozen gumbo vegetable mix (okra, corn, celery, onions, peppers)
1-2 tsp blackened creole seasoning
Directions:
Combine all ingredients in a saucepan. Bring to a boil, and then simmer for 30-40 minutes to let flavors combine.

Hmmm...Alex loves black eye peas. Yes, I am 15 weeks pregnant. It is so weird! I am just glad to want to cook and look at food again. :)

Where I am going with this? Who knows. But I know a couple people who love okra and blackeyed peas who I will send this recipe to. :)

I must admit I have never had black-eyed peas or okra! But this does look yummy, and cornbread makes anything better!
