Easy Individual Pumpkin Pie Souffles


I have been craving a pumpkin dessert now that Fall is on its way! I didn't want to make a full pie, and my pumpkin muffins are more of a breakfast food for me. I decided to try creating a single serve pumpkin dessert. I looked around the Internet for recipes to get ideas and then came up with this tasty treat. It was so easy to make, and it cured my pumpkin craving with every bite. I only regret that I did not have any Redi-Whip to put on top. I did not have graham crackers, so I used half a clif-z honey graham bar. If you prefer your souffle to be less sweet, use only 1 tsp sugar.
Individual Pumpkin Pie Souffles:
1/4 cup liquid egg whites
1/4 cup pumpkin puree
1-2 tsp sugar (or sugar substitute, I used agave nectar)
1/4 tsp cinnamon
pumpkin pie spice to taste
1/2 honey graham clif z-bar
1 tsp butter or butter substitute of your choice
Mix egg whites and sugar. Add pumpkin puree and spices and mix. In a separate small bowl, mix half of a clif z-bar crumbled with butter and press into bottom of bowl. Pour pumpkin mixture over crust. Microwave for 1 minute and 30 seconds. Invert bowl onto plate and your dessert should slip right out. Top with whipped cream or ice cream and ENJOY!!

pumpkin pie is my favorite dessert of the fall season! especially thanksgiving that's one of the reasons why I get excited for thanksgiving.... it's all about the pumpkin pie!

Cool! This is the 4th dessert I see in a row that has pumpkin and I'm really starting to crave it! Using it in souffles is a great idea!
