Low Fat Pumpkin Oatmeal Cookies



I have enjoyed all the pumpkin recipes I have made recently, but this is my absolute favorite so far. These cookies are chewy gems full of the wonderful medley of pumpkin, spices, and oats. They would make wonderful breakfast treats. I love that these are low fat and full of the goodness of oats and pumpkin. I used oat flour and substituted pumpkin pie spice for the cloves and nutmeg. I might have to try these with chocolate chips next time!


Low Fat Pumpkin Oatmeal Cookies

Ingredients:

1 c. pumpkin

2 egg whites, whipped

1 c. brown sugar, packed

1 1/2 c. all-purpose flour

1 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. cloves

3 c. rolled oats

1 c. raisins

Directions:
Spray baking sheet with cooking spray. In a large bowl combine pumpkin and egg whites. In a separate bowl combine sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and raisins. (Batter will be very dry at first.) Mix ingredients together just until moistened.Drop cookies by tablespoonfuls onto prepared baking sheet, 2" apart. You can leave the cookies in the shape of a ball (the baked cookie will still be a ball) or flatten them out with the bottom of a glass before baking.Bake at 350 degrees for 15 minutes.

All of your pumpkin recipes are SO welcome right now. For the first time in too many years I had a garden. The first plants to come up were a mystery plant that sprouted from my compost before I ever planted a seed. I let them have their way in a corner of the garden and they turned out to be PUMPKINS!

So now I have four nice pumpkins to cook with and your recipes and theme are much welcomed.

ohh my you are makig it harder and harder for me to decide which ones I want to make... im sticking to my guns and going with the pumpkin choc chip bars... they look great tho as all the others do too!

Oh...more pumpkin! Yum! And yes, I think you should try the chocolate chips...chocolate makes everything better in my opinion!

I just made these and they were very dry. I did use whole wheat flour, which could have contributed to it. But you really need to add something else to moisten, such as milk, applesauce, or margarine.
