Single Serve Chewy Oatmeal Cookie

I wanted a warm chewy cookie, but I didn't want to mix up a whole batch of cookies. I remembered that I had seen a recipe for making a single cookie with a packet of instant oatmeal. I found the recipe, but then I decided that it was late, and I didn't want to heat up the oven. I made a few changes to the recipe and created a microwave version. The result was a nice chewy, moist, warm oatmeal cookie that was also low in calories and fat. The cookie I made only had 160 calories and less than 3 grams of fat. I used my sweet potato butter, but you can use applesauce, apple butter, pumpkin butter etc. I am going to try this recipe again with a flavored instant oatmeal. Here is my recipe and the recipe that was my inspiration.

Megan's Microwave Instant Oatmeal Cookie
1 package instant oatmeal
2 tbsp sweet potato butter
2 tbsp milk (I used hemp milk)
1/4 tsp baking powder
pinch of cinnamon
Directions: Mix all ingredients together. Spoon mixture onto plate and flatten into a cookie shape. Cook for 1 minute. If center is still too moist, cook for an additional 20-30 seconds. Let the cookie cool for several minutes. Enjoy.

Instant Oatmeal Cookie
1 (43 g) package quick-cooking oatmeal (your flavor choice)
1 tablespoon whole wheat flour
2 tablespoons unsweetened applesauce
1/4 teaspoon baking powder
1/8 teaspoon vanilla
Directions:
Comebine ingredients and spread onto a greased cookie sheet or pizza pan. Bake at 350 for 8 - 10 minutes.

Who doesnt love a single serve cookie! Looks yummy... do you think aything can be subed for the sweet pot. butter?

Sportsnutrition- I think anything with a similar consistency would work. The oven baked recipe called for applesauce.

Ahh! I love this! I probably say the same thing EVERY time you post, but here we go with yet another perfect recipe! I am often discouraged to bake because I don't want to have so many cookies/muffins lying around, so the single-serve tip is wonderful!

That is just plain brilliant! I have a small microwave cake recipe that I love to make, now I can try a microwave cookie too! I love desserts a little too much, so the built-in portion control is a big plus. ;-)

This recipe was awesome! Also- I added 3 packs of splenda and , for the last 15 seconds, drizzled a little bit of sugar free chocolate syrup. SO good!
