Sweet Rice Muffins


Here is recipe you can use if you have leftover rice. I had a lot of Forbidden Rice left from last night's pudding. I decided to make rice muffins. Once again, I searched for the recipe and then created my own based on all the recipes I found. I wasn't sure what to expect on my first bite, but I will tell you that my taste buds were in heaven! I will definitely be making these again. They were so sweet and moist, and they almost had a rice pudding taste! I know what I will be having for breakfast the next couple of days!! Next time, I am going to add some raisins!!!
Sweet Rice Muffins
makes 10-12 muffins
1 egg
1/4 cup agave nectar, honey, or sugar
2 tblsp applesauce
1/2 cup milk
1 tsp vanilla
1 cup cooked rice of your choice
1 1/3 cup oat flour
1 tblsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt (optional)
Directions:
Mix oat flour, baking powder, baking soda, and salt.
Add all other ingredients and mix.
Spoon into muffin tins.
Bake at 400 degrees for 10-12 minutes.

Yum! I've never had a rice muffin before, but it sounds like a more solid version of rice pudding!

Sounds like a good idea. I have some bulgar wheat I bought over the weekend and have been looking for a fun way to eat it. Do you think this recipe will work with bulgar wheat as well?

Rice muffins? Sounds VERY interesting! I was planning on rice as a side at dinner tonight so I think I'll make a little extra and try these out!
