Thanksgiving Stackers!


I realize that Thanksgiving is still over a month away, but with all this Fall and pumpkin talk, I was craving the tastes of November! You can be creative as you want with this one. I had some precooked polenta, so I cut it into rounds. Then I topped it with cream cheese mixed with sage and thyme. Next I put sweet potato rounds with another layer of the cream cheese mixture on top. Then I took organic roasted turkey deli meat and folded it into triangles for the next layer. I topped the stacker off with a tsp of cranberry sauce. These ended up being mighty tasty!!! I was able to enjoy a Thanksgiving delight without feeling overstuffed. Next time I want to make my own polenta and put the sage and thyme in it. You can make this vegetarian by using turkey substitutes such as Tofurkey. I would love to hear everybody's ideas on ways to add to or improve this recipe.

mmmm...some of my most favorite foods all in one place! I had never tried cranberry sauce until last year and realized how much I actually love it. Can't wait for T-day!
